Silverbeet three ways
The plant that never stops, and what to do about it.

Silverbeet keeps growing as long as you keep picking the outer leaves. By late winter, the shared beds have more than anyone knows what to do with.
Soup
Stems chopped small and softened with onion, leaves added at the end. It’s the working bee lunch more often than not.
Pie
Leaves wilted, squeezed dry and mixed with whatever cheese is in the fridge, baked in pastry.
Quick sauté
Garlic, a pan, the leaves and a squeeze of lemon. Five minutes.
