The compost bays, explained
Three bays, one direction: from scraps to soil.

The bays run left to right. The first one takes new material. When it’s full, it gets turned into the middle bay, and the middle bay into the last.
Greens and browns
Greens are wet and fresh: kitchen scraps, grass clippings, weeds before they seed. Browns are dry: leaves, straw, shredded cardboard. A heap that smells usually needs more browns.
What stays out
Meat, dairy, cooked food with oil, and anything that has been sprayed. Not because it won’t rot, but because of what it attracts while it does.
